It doesn’t look much, I grant you – but this will be my cheese room.
I’ve just had a meeting with my local EHO (Environmental Health Officer) and, in principle, he has approved the space.
It’s currently part of our house (and used to be a nursery school) – but I’ve cleared it (and cleaned it thoroughly in advance of the EHO visit), except for the table and chairs and the wine cooler that I currently conduct my cheese experiments in.
A lot of building work to come. The lino will have to be replaced, food-grade panelling on the walls, etc. etc.
What have I let myself in for?
The entrance will do, I suppose…
This will become the maturing room, cutting out the only Southern light…
Shelves, radiators, etc. all must go.
I think I need a drink to think things over and contemplate my new domain.
