Knew I would have to shift. OK. so, the wash room has to go as I need far more space for maturing cheese.
This means the wash room will have to be incorporated into the main cheese/make room – which means I will have to devise a controlled process whereby cheese making is separated by time from the clean-down.
Nothing is easy but we are, I think, making progress…
